About this course

Four traditional snacks and drinks often served as starters or accompaniments to main meals and drinks.  Over the 4 weeks we will plan, prepare, cook and present 4 snacks/drinks:   

  • Spicy Chicken Wings   
  • Accra (saltfish fritters),  
  • Pakoras (fried potato/onion in batter)  
  • Drinks: Sorrel, Ginger and Peanut Punch 

By the end of the course, you will: 

  • Apply food safety and nutrition principles in planning and preparation of food 
  • Plan and prepare simple snacks/drinks to accompany a main meal  
  • Cook four traditional West Indian snacks/drinks 
  • Present and serve snacks/drinks at a social event 

Resources required by attendees:

Seasoning/marinade: coriander, salt, sugar, spring onions, garlic, onions & tomato, spinach, cloves 

Main Ingredients: 1 kg chicken wings, 250g salted fish, 250g flour, 250ml oil, 500g ginger, 1 pack sorrel (hibiscus), 1 small bottle peanut butter, 1 tin carnation milk,
