About this course

A traditional curry menu originating from southern India but with a West Indian twist.  Over the four weeks we will plan, prepare cook and present 4 dishes:   

  • Curry Chicken/Mutton
  • Channa and Aloo (chickpea and potatoes)
  • Dhal (lentil soup)  
  • Saffron Rice  

By the end of the course, you will: 

  • Apply food safety and nutrition principles in planning and preparations of food 
  • Plan and prepare ingredients for a curry menu  
  • Cook 4 West Indian curry dishes  
  • Present and Serve a complete Caribbean Curry meal 

Resources required:

  • Seasoning/marinade: coriander, cumin, curry powder, salt, spring onions, garlic, onions & tomato, turmeric. 
  • Main Ingredients: 1 kg chicken/mutton, 250ml oil, 1 kg potatoes; 2 cans chickpea; 0.5 kg red lentil peas, rice

To book and enrol on one of our courses, you must have been living in England and have been resident in the UK for the past 3 years.

Some exceptions may apply if you are living in England with evidence of the right to remain and are from an EEU/EEAU country (completion of a questionnaire will be required).  As we no longer receive funding for our ESFA-funded courses for learners living in the devolved areas listed below, full cost fees would apply to these courses if you live in these areas:
