About this course

As we leave the winter months behind, and days get longer we often want to change what we eat to match the weather. The course will help you to explore the wonderful vegetables that the seasons have to offer. We’ll make fresh, tasty dishes that will have you well on your way to your 5-a-day…and beyond! There will be spring soups, snacks and a make-ahead salad bar stuffed with filling, nutritious choices to make mealtimes easier and more enjoyable. During each session, in our new custom-built teaching kitchen, you’ll learn new techniques and ideas that can be used in lots of different dishes. We’ll provide the ingredients and, as the course develops, you will be able to help decide what to cook. All the recipes we use will be plant based but with an option to use more traditional meat and dairy products if you like.


Course Summary:

In our five relaxed and friendly sessions we will prepare:

• A spring soup with almost endless variations

• Many different components of a salad bar to create varied, nutritionally balanced, tasty meals

• Vegetable based snacks such as summer rolls

• Lots of different ways to use green vegetables, especially the leafy ones.

By the end of the course, you will have:

• Prepared a range of meals making the best of what’s in season and on offer.

• Learnt how best to store them, ensuring nothing goes to waste.

• Used maths related to weighing and measuring.

• Learnt how to scale a recipe up or down to feed more or less people.

• Considered food budgeting and how to make the most of your food money.

• Compared recipes and meals to the “Eatwell Guide” to ensure that all food groups are included. 


You will need to bring all ingredients for the course, as well as containers to take them home in. 

The tutor for the course will be in touch with you to advise what ingredients to bring for the first session.

To secure your place on the course BOTH the following must be done:

  • Complete our INSPIRE ONLINE ENROLMENT FORM for each person attending the course.

To book and enrol on one of our courses, you must have been living in England and have been resident in the UK for the past 3 years.

Some exceptions may apply if you are living in England with evidence of the right to remain and are from an EEU/EEAU country (completion of a questionnaire will be required).

As we no longer receive funding for our ESFA-funded courses for learners living in the devolved areas listed below, full cost fees would apply to these courses if you live in these areas:
